Join us for an engaging conversation as Chef Bruce Ucán reflects on his journey from the Yucatán to Louisville, pioneering indigenous flavors at Mayan Café, which recently celebrated 18 years. In discussion with Dr. Lisa Markowitz (Anthropology and Latin American and Latino Studies), this event will explore the cultural significance of Mayan cuisine, sustainability in gastronomy, and the intersection of tradition and innovation.
