Soft Sugar Squash

A traditional dish from Somalia 


- 1 large butternut squash (about 1 pound), cubed and peeled
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 2 tbs olive oil


  1. Wash hands with warm water and soap, scrubbing at least 20 seconds
  2. Fill a 9.5 quart pot halfway with water and bring to a boil.
  3. Add the squash and salt. Cook until tender, about 10 minutes
  4. Drain the water and combine the cooked squash with sugar and olive oil. Gently combine.
  5. Serve.

Makes 3 Servings
