Okra & Tomatoes

Ingredients

  • 1/2 Tablespoon olive oil
  • 1 pound of whole fresh okra
  • 2 cloves garlic, thinly sliced
  • 1/2 pound ripe tomatoes, peeled and diced
  • 1 lemon, juiced
  • 1 cup water
  • 1 teaspoon paprika
  • Salt & pepper to taste

Preparation

  1. Wash and dry the okra and chop off their crowns (tops), avoid exposing the inside.
  2. Heat olive oil in saucepan on high, toss in okra and garlic and sauté for 3-5 minutes
  3. Add diced tomatoes and mix well
  4. Add lemon juice, mix and bring to boil
  5. If sauce seems too thick, add up to 1 cup of water
  6. Add paprika, salt and pepper
  7. Cook partially covered on low heat for 30 minutes
