Watermelon Salsa

 Ingredients

  • 2 cups chopped seedless watermelon
  • 1 cup fresh blueberries
  • 1 cup chopped cucumber
  • ½ cup chopped onion
  • ½ cup chopped red pepper
  • ½ teaspoon garlic salt
  • 1 teaspoon lime juice
  • 2 tablespoons balsamic vinegar

Directions (Makes 10, ½ cup servings)

  1. Combine watermelon, blueberries, cucumber, onion and pepper in a large serving bowl.
  2. Sprinkle with garlic salt.
  3. Toss to coat.
  4. Stir in lime juice and balsamic vinegar.
  5. Cover and chill one hour.
