Spicy Joes
Ingredients (use your imagination, but here are some suggestions)
- 1 lb ground beef (consider buying local if available)
- 10oz can hot diced tomatoes with jalapenos, undrained (hot Rotel used)
- 1 red bell pepper, diced
- 1/2 cup corn
- 1/2 cup ketchup
- Cooking spray
- 6 Whole wheat buns
Directions
- Over medium heat, brown meat and veggies that need softening in skillet covered in non-stick cooking spray
- Drain
- Add tomatoes and ketchup, stir and cover
- Cook covered on low for 10 minutes
- Serve on whole wheat buns
