Spicy Joes

Ingredients (use your imagination, but here are some suggestions)

  • 1 lb ground beef (consider buying local if available)
  • 10oz can hot diced tomatoes with jalapenos, undrained (hot Rotel used)
  • 1 red bell pepper, diced
  • 1/2 cup corn
  • 1/2 cup ketchup
  • Cooking spray
  • 6 Whole wheat buns


  • Over medium heat, brown meat and veggies that need softening in skillet covered in non-stick cooking spray
  • Drain
  • Add tomatoes and ketchup, stir and cover
  • Cook covered on low for 10 minutes
  • Serve on whole wheat buns
