Honey Garlic Chicken and Potatoes

• 1 ½ pounds chicken breast
• 2 tablespoons garlic, minced
• 1 teaspoon ginger paste
• 1/3 cup honey
• ¼ cup soy sauce
• ½ teaspoon dried oregano
• salt and pepper, to taste
• 16 ounces red potatoes, cubed
• 1 tablespoon olive oil
• 2 tablespoons fresh parsley, chopped (optional)

1. Preheat oven to 400°.
2. Toss quartered potatoes with olive oil. Season with salt and pepper.
3. Pour onto one half of a sheet pan covered with cooking oil.
4. Roast for 10 minutes.
5. Mix garlic, ginger paste, honey, soy sauce, oregano, salt and pepper together in a bowl.
6. Place chicken on the other half of the sheet pan.
7. Spoon half of the garlic honey sauce over the chicken.
8. Roast for 15 to 20 minutes.
9. Change oven to broil for 5 to 10 minutes.
10. Heat remaining half of sauce over medium-high heat. Cook until reduced by half.
11. Spoon remaining sauce over chicken. Garnish with fresh parsley.
