Farmers Market Salsa

Makes 8 servings | Serving size: ½ cup

Ingredients

  • 5 medium tomatoes
  • 1 jalapeno
  • 1 garlic clove, peeled and minced
  • ½  medium red onion, peeled and cut into ¼ inch pieces
  • 1 (15 ounce) can black beans, drained and rinsed
  • 3 tablespoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon fresh cilantro, chopped

Directions

  1. Wash the vegetables.
  2. Cut the tomatoes into ½ inch pieces and put into a medium-sized bowl.
  3. Remove ribs and seeds from jalapeno and mince.
  4. Add the garlic and onion to the tomato mixture.
  5. Add black beans to tomato mixture.
  6. Stir in the lime juice, salt, and pepper.
  7. Add cilantro and stir until combined.
  8. Serve with fresh vegetables and tortilla chips for dipping.
