Butternut Squash Mini Tacos
Ingredients
- butternut squash, cubed
- tomatoes, diced
- bell peppers, thinly sliced
- corn on the cob
- chimichurri (see recipe below)*
- tortillas
- taco seasoning
Ingredients for Chimichurri*
- 5 cloves of garlic
- 1 serrano pepper
- 1 cup cilantro without stems
- 1 cup parsley
- 3 tablespoons avocado
- ¼ teaspoon salt
- 3 tablespoons lime juice
- 1 tablespoon maple syrup
- water to thin
Directions
- Marinate squash and bell peppers in taco seasoning.
- Grill corn. Slice off of the cob.
- Sautee peppers and squash.
- Build taco with tortilla, squash, peppers, corn, chimichurri, and tomato.
- Combine all ingredients in a food processor except water. Blend well. Add water until desired thinness is achieved.
