Butternut Squash Mini Tacos

Ingredients

  • butternut squash, cubed
  • tomatoes, diced
  • bell peppers, thinly sliced
  • corn on the cob
  • chimichurri (see recipe below)*
  • tortillas
  • taco seasoning

Ingredients for Chimichurri*

  • 5 cloves of garlic
  • 1 serrano pepper
  • 1 cup cilantro without stems
  • 1 cup parsley
  • 3 tablespoons avocado
  • ¼ teaspoon salt
  • 3 tablespoons lime juice
  • 1 tablespoon maple syrup
  • water to thin

Directions

  1. Marinate squash and bell peppers in taco seasoning.
  2. Grill corn. Slice off of the cob.
  3. Sautee peppers and squash.
  4. Build taco with tortilla, squash, peppers, corn, chimichurri, and tomato.
  5. Combine all ingredients in a food processor except water. Blend well. Add water until desired thinness is achieved.
